Got an entire Sunday off with nothing to do, so you know what? I am going to brew. :ban:

Only real sticking point is that all heating of water is being done with an electric range. Probably have to pre-boil water in the 6-quart pan and pour it into the 7 gallon pot to bring it to a rolling boil.
 
You should be fine boiling on electric, I use it for all my extract 3 gal boils. Just remember not to add all your DME/LME at the beginning of the boil. Add it gradually for better hop utilization and lighter color.

No need to do a full boil.
 
I have a 5.5 gallon pot I use on an electric stovetop and it works fine. There's no problem getting a full boil...it just takes some time. I've found putting some aluminum foil around the burner helps protect the stove's enamel finish by the way.
 
If it's a glass top you may run into a few issues trying to get a rolling boil.

my glass top I had issues getting a boil with then I loosly wrapped the pot with aluminum foil and it helped a lot. or you could buy reflectix
