While I'm waiting on my "Big Beer" as it was described to carb up, who has a suggestion for a really quick beer I can make to hold me over? I still want something that tastes good, but will make and carb up fast.

Heffe's are pretty quick from grain to glass. I have made a nice rye pale ale on the fast track too.
 
If you cold crash them, you can be drinking an APA in less than 10 days. Or if you don't mind a little heffe, forgo the crash.
 
Do you have a kegging system?

You can get a Hefe (wheat and pilsner malts...sometimes a bit of rye) from grain to glass in about 10 days if you force carb it, about 3 weeks if you carb in bottles.

Anything in bottles is going to take a solid 2-3 weeks just to carb and condition properly, so you really need a kegging setup for the quickest turnaround.
 
The key is low gravity. The less the yeast have to eat, the quicker the turnaround time. Hefeweizens are best drank young, but if you brew a higher gravity one, it may not ferment as quickly as you'd like.

Go for something like an English Mild or Bitter. An APA is better with a dry hop which will add a few days to your timeline.
