Overbuilt an A10 Darkness starter for my annual Christmas porter, and I am looking for a stout recipe to use it the rest of it in. Milk...oatmeal...sweet...whatcha got? Not looking for an imperial, probably want something with a little quicker turnaround.

Mash 154 for 60 min
10# maris otter
1# flaked oat
1# crystal 80
.5# roasted barley
1# chocolate malt
1# Lactose (late boil)

1oz Mt. Hood 60 min
1oz Fuggles 15 min

I use 4 oz cocoa nibs & 4 vanilla beans soaked in Vodka or Bourbon for 1-2 weeks then added after day 7 in the fermenter . Usually let it go for 2 weeks then keg.

Just brewed again today .

I made a stout recently that has definitely been the best beer I have brewed. I read the Chris McKenzie https://brewublog.com/stout/. blog and listened to the basic brewing podcast where they discuss it and what he felt made the biggest differences. Tried to read a few blogs on cloning an Irish Stout called Beamish and settled on this recipe !

yeast: Irish ale
61.7% marris otter
8 % pale wheat
8% roasted barley
3.4% chocolate
11% crystal 30
7% dextrose
ABV: 4.9%
Used east Kent Goldings to around 24 IBU

it’s delicious
