Hey I know this seems like a basic question, but do you use a pot lid on your bk? The guy who taught me how to brew never did, so I didn't. But I modified my burner to fit and support my keggle better. It works great, a bit to great and I had more boil off than I expected even on very low heat.

I use a lid until it starts boiling then off it comes. You need to let stuff out of the kettle while it's boiling (mostly DMS), so you should never boil without the lid.

It's probably ok to keep the lid on while you ramp up to boiling, but once you reach a boil, you'll want to remove the lid to avoid DMS that is usually evaporated off during the boil from condensing back into your pot. DMS is responsible for sweetcorn type off-flavors, but is easily driven off by a rolling boil. Hope this helps.

Thanks guys. That leads me to a more complex question. If I need to increase the volume out of my MT do I need to increase the amount of grain to keep on par with a recipe? Or could I just increase the volume of water to make my after boil volume correct?
