Sure, you can if you want, there probably isn't any fermentation going on. The secondary is mostly used to clarify the beer, so the extra day probably won't make much of a difference.
Sure, pull it. I don't even bother to secondary hefeweizens because they're supposed to be cloudy. 2 weeks in primary then straight into bottle or keg.

No seriously, I just threw a bottle of hefeweizen in the fridge after 6 days. It'll get better over time, especially because it'll continue to condition in the keg. But it's not like it's going to taste OFFENSIVE if you bottle/keg 1 day early.
