Ok, my first lambic.

Simple 5 gallon run. Turbid mash.

Boil time depends on how much wort I draw off from turbid mash.

6 pound 2 row
5 pound unmalted wheat
1 pound rice hulls

1 oz Aged Hops

Using Wyeast Belgian Lambic
Cultured dregs from Cuvee Rene

Will add cherries after primary fermentation done


Question: Is 6 pound 2 row going to have enough diastatic power for the unmalted wheat?

Should I include some portion of the wheat as malted wheat?
 
That looks pretty good to me. If you can, I'd replace the 2-row with Pilsner malt, but it's no biggie. For comparison, my lambic was 60% pils, 32% wheat, 8% cara-pils.
