Sorry for the cinco de mayo pun, but this whole Lager deal is gettin my goat:cross: This is a recipe that has fallen off the light bulb in my brain an spat out on to my brew plate. See what you think, recommendations very very welcome:mug: As you can see from my posts in this forum lagers have me intrigued:drunk: Partial Mash- EX

6.5 lbs Briess Pilsen Liqued Extract
2lb Briess Aniversary Malt
.5lb Briess 60l caramel malt
.5lb Briess Weyermann carahell malt
.5lb Vienna malt

HOPS: 1oz German Hallertaur Bitter
.5 oz Saaz Flavor
.5 oz Saaz Aroma

Yeast: White Labs #830 The grain bill might be a bit long but Ithink these will compliment each other in the final brew.
 
You're hoping for a darker lager? I'd lose the crystal malt completely, too sweet too dark and would cover up the crispness you're trying to get from the Moravian style malt.

Otherwise I like it.
 
That would lighten the colour, but the taste would still not be my cup of tea. It's your beer, try it and see.
 
So the caramel will take away from the other malts and not compliment them then I will ace it completely. Is there another special malt or grain you would add in it's place or does this bill look good as is ( without the caramel)? Cheers Mikey
 
If you're really interested in making a true German style Pils or Helles, they typically use 100% pils malt and nothing else. The Moravian style equivalent is spot on. If you want more colour and a complex taste, then the sky is the limit. There are always trade offs though.

I personally prefer mine as dry and crisp as possible, so I keep the unfermentable adjuncts out. The Vienna will give you a nice effect, I use up to about 2 lbs when I make that type of lager.

I'd ditch the crystal and bump up the Moravian to compensate. Good luck!:mug:
 
Godd call Mikey on dithching the crystal and adding more vienna. I am going for more of a dry crisp summer brew. Thanks for the info I will let you know how it turns out! Cheers
 
The Moravian I mentioned is the Anniversary malt, not the Vienna. If you like Negra Modelo, that's what you'd be heading for with the Vienna. It's actually one of the few remaining commercial examples of a Vienna Lager!
