I made an IPL (recipe details below) and, long story short, my final gravity is way off. I fermented for 17 days at 54°F, did diacetyl rest for 48 hours at 65°F, and just now racked to secondary to bring down to lagering temp (35°F).

Is the final gravity supposed to be this off before lagering? if not, can I bring it back to fermentation temp after I've done the diacetyl rest already? This is my third lager and neither of the previous ones had this problem. I'm confused.

9 lbs Pale Malt (2 Row) US (2.0 SRM)
2 lbs Munich Malt - 20L (20.0 SRM)
1 lbs 8.0 oz Vienna Malt (3.5 SRM)
8.0 oz Caramel/Crystal Malt - 40L (40.0 SRM)

1.00 oz Centennial [10.00 %] - Boil 60.0 min
1.00 oz Chinook [13.00 %] - Boil 30.0 min
4.00 oz Cascade [1.00 %] - Boil 5.0 min

American Lager Yeast (White Labs #WLP840) w/ 1.5L starter

Original Gravity: 1.067
Final Gravity: 1.033 (expected: 1.016)
 
Somethings up there.. 1.033 for FG.. Needs more time to ferment or under pitched (why not a 2L starter / stir plate hopefully/stirred frequently? ) Id set it for another week at ferm temp. and take another FG measurement and go from there.
 
Just to be sure, you used a hydrometer and not a refractometer?
 
I keep missing details in this thread. I used a refractometer for the 1.033, I just took a hydrometer sample and got 1.020. thanks for keeping me on my toes
 
well than thats a big difference. lol 1.020 with expected 1.016 ? Congrats. . . well than . . now rack to keg and store that puppy for a month or more.
