I misread the directions. I was supposed to keep the temp. at 60 - 64 degrees for 3 days, then for a week between 48 - 60 degrees. What I did was kept it at 64 degrees for 10 days. It is now in the basement at 54 degrees. I'm supposed to bring it back to room temp. for 24 hours then put in cold fermentation (38 - 45 degrees for 2 - 12 weeks.) At this point, what should I do? Bring it back to room temp for a day then put in fridge? Thanks in advance for your advice
 
What yeast did you use?

When all else fails taste it. If it taste's ok then it's ok. Drop the temps, carb and enjoy. If you are naturally carbing with yeast instead of a Co2 tank then you want to carb, drop the temps and then enjoy.
 
I used WL800 yeast. At this point I'm supposed to put it in secondary and keep cold. I will taste it tonight and decide
