Why some recepies contains some lactic acid?

It's usually used to adjust pH.

When using water with high alkalinity or a grain bill for a very light beer it can assist bringing the pH down to an ideal level. Acidulated malt will do the same but is not recommended if more than 3% of the total grain bill
