When brewing wheat do u want the krausen and foam to fall below? Should it be on top as long as possible? Anyone move carboy around a bit before siphon to make it settle?

The krausen will naturally fall once fermentation slows down. Just leave it be, wheat is no different in terms of krausen.
 
Agreed. If you have to agitate to get the krausen to fall it is not ready yet.

That is not to confuse a crust of dried krausen clinging to the side of the fermenter. I would try to move the fermenter carefully and leave as much of that undisturbed as possible.

I accidentally agitated it while going from blow off to airlock. A bit of krausen started to fall...

Doesn't matter. The point is to leave it be until it is finished (krausen falls, bubbles stop, FG hits). :mug:
