technically, you will need multiple regulators, but they can be ganged together.
I will say from my experience, that I got tired of trying to work with different pressures, and I now use the same pressure for all my beers, meads, and ciders. I do keep my sodas at a different pressure.
This allows me to just use one of my manifolds, and swap around the gas disconnects when gassing up the kegs, and I don't have to worry about which one is getting which one. This also means I don't have to worry about leaks as much. The more fittings you have, the more likely you are to not only have a leak, but also develop a leak over time.
