As I read this cider forum, many people state that some ciders benefit from additional tannin and acid.

I was wondering if I could use key lime zest and juice to accomplish both tannin and acid? I always have key limes on hand and I really like their flavor.
If yes, how much per gallon?


I plan on doing this 2 gallon recipe to start:
  • 1.75 gallons Walmart apple juice
  • 4 - 12 oz frozen apple juice concentrate
  • 1 tsp Yeast Nutrient
  • 2 oz Brown Sugar- Bottling priming
