Right now I siphon from the kettle to the carboy. I thought this is the way you're supposed to do it, but now I am wondering why?

If you have a fine strainer and a funnel (or using a bucket rather than a carboy), isn't pouring and straining faster and easier? Is there a problem with it?

I'm just reevaluating my brewing processes here, don't mind me... :tank:

I always use a strainer and funnel. It's fast, removes hops, and helps aerate. It also can be a little messy.:D I would probably do things differently if had a valve in my kettle but this seems to work fine.

For extract, since the volume is usually lower, I just pour through funnel/strainer...

If you want to do full boils though, I'd consider drilling a hole in your kettle and using a weldless fitting/ball valve with some type of SS braid or manifold... After the wort is cooled, you just connect a tube, put the other end into the carboy and open the valve...

Sometimes I siphon but the last few batches I have just used a sanitized pitcher and scooped the wort up and poured it through a strainer/funnel into the fermenter.

I bought a valve and fitting for my kettle now, but before I would siphon most of it out and then strain the last gallon or two. Lifting 5 gallons and pouring is a bit hard on the back for me:D

I just added a valve to my kettle, will use it this weekend, sounds like im going to appreciate it!

I found three different sized splatter screens @ Target for about 8 bucks which worked great. They're pretty much a flat strainer and sanitation is a snap as I just put it over an extra brew pot filled with about a quart of water and steamed it clean! When I was ready to strain, I poured my wort into the extra 4 gallon pot, through the screen (pot and screen were both sterilized with heat and the screen caught 90% of the gunk) and then into the carboy. Great aeration and a clear brew!
