Unfortunately theres no alarm. Id be happy to use a normal type thermometer but havent seen one with an alarm setting- which is the part i need. If i wanna stand there watching it or check every five minutes i can already do that. I could have sworn thermapen made one with an alarm but didn’t see it on their site.

Plus having a probe on a cord is easier to deal with for a half batch when the kettle is less than full. Otherwise youd have to figure out a way to dangle it into the wort. For my purposes i think probe makes more sense. But open to suggestions, just want/need an alarm function.
 
I use a bayou 1064 on the avantco 3500. Works well. Rapid temp increases, haven't boiled more than 8 or so gallons, but it seemed to handle that volume pretty well.
 
I dont use the pid probe and have no regrets. Many feel very opposite and we have argued this.
Thats just because you dont realize what your missing really... If you had it set up and understood how to use it as other do. I doubt you would be bragging about not using it. Especially since you already bought all the unnecessary hardware just to use it like a $14 ssvr and potentiometer setup.
