Does anyone have a suggestion on the best way to clean my stainless steel kettle and plastic fermentation bucket? Do you recommend soap and water like the guy at the shop suggested?
 
That's what I do - regular kitchen soap and dish sponge. Don't scrub really hard, especially on the bucket - you don't want to cause any scratches in the plastic - nasties can hide in there and avoid getting sanitized out.
Hot water, soap and elbow grease is the way to go. Rinse really well, then upside down to dry.
On brew day, another good rinse, then spray down with star-san or other sanitizer of choice. I then put the lid loosely on until it's time to rack in. (I do the rinse and sanitize while my wort chiller is working.)
 
You can also fill with hot water and a scoop or so of fragrance free oxyclean (or homemade PBW) for an overnight soak.

Then rinse well the next day. Maybe wipe with a sponge to clear any residue.
 
Dish soap & water is OK for the SS kettle, I use it on mine when I don't have a gallon jug of PBW mixed up. I use maybe a 1/4" of PBW in the bottom of the kettle & a Dibie brand scrubber. They're great for getting the kettle shiny again! Rinse, wipe dry & allow to air-dry to passivate again. I rinse the yeast/trub, etc out of the bucket, then put in 3TBSP of PBW & fill to the top of the gunk ring with room-temp water. Soak overnight, then scrub lightly to loosen the krausen ring. Rinse & dry. No scratches that way. I've even allow the scrubbed-off gunk to settle out then drain the PBW into a orange home depot bucket to soak bottles in to de-label.
