Simple question here. Will carbonating a keg slow down the conditioning process? I have an Oktoberfest kegged that I'll be waiting another week or two or three to drink, but I'd like to go ahead an carbonate it.

I'm new to kegging, so I don't yet feel comfortable shaking the keg under high pressure to carbonate. I'd rather just let it sit under serving pressure for several days.
 
That's how I do it. I decide what volume of co2 I want and set the regulator to that psi for a week or so then set at serving temp for another two weeks....then drink.
 
I usually force carbonate during lagering. I want the beer to be at equilibrium by the time it's ready, and besides, the positive pressure prevents oxygen ingress.

Agitating beer is not good practice. Not only does it resuspend anything settled to the bottom of the keg, it coagulates foam-positive proteins.
