I'm about to start building a keezer from a 7 cu/ft HiSense freezer I got from Costco last week. I've been looking for red oak 2x6's all week long and lumber yards seems to think I'm crazy when I ask for oak in a 2x6. Pretty sure I've exhausted all of my local options....any suggestions? Was hoping to at least purchase the lumber today.

What do you mean by something cheap? Like laminate it to 1x6 pine?

You can get dimensional hardwood from the big box stores, but it is usually thinner stock and rather expensive. Generally, most hardwoods are sold as rough stock. If you go to a hardwood dealer you will find what you need. It will be sold by the board foot with a thickness in quarters of an inch. For example, 8 quarters will be 2 inches thick. The problem is that you will need the equipment to mill that material into the 2x6 stock that you desire. As a, somewhere in the middle, option, if you have a Woodcraft store near you, they will usually have the wood that you are looking for and can possibly mill it down for you. The downside is that it will be a fair amount more expensive that the typical hardwood dealer.
As kh54s10 said, you may just want to use some regular lumber and then glue a thin red oak facade onto it.

Don't most folks build their collars using 2x fir/pine for the structure then use the fancy stuff on the outside?

When I built my keezer--and another for my son--I used just regular 2x6s for the inside, then nice 1x8 facing on that. Here's the thread that shows that:

In fact, if you use that method you don't even need to glue the collar to the freezer mouth--and the outside still looks great.

Others have probably answered better already, but I would say anything from pine to low grade plywood strips for the inside. The priority to me is good looks outside, maybe foam for insulation and energy savings. And something cheap but durable on the inside mostly to make up for the thickness needed.
