I'd rather paint my apron for my keezer than stain. I just realized I not should use an outdoor latex paint I already have. I have read that appliance paint can be used. If I would go that route would I need some sort of primer? Is there another alternative? I may decide to go with a stain and some sort of polyurethane (or what should I use) but I'd rather not. Thanks.
 
Any paint will work, even latex, on a wooden collar.

If you want high gloss it needs a good layer of primer first. You could skip the primer and instead put one or two layers of your finish color paint on, but diluted with 15-20% solvent (or water, if using latex). Then put on 1 (or 2) coats of gloss.
Sand lightly with fine sandpaper (150-200 grit) between coats.
 
Are you planning on painting the interior side as well, or just the top edge where the seal contacts?
For that matter, are any of you doing anything to seal the interior side of the collar. I am planning on a simple build where appearance is not particularly an issue (utility room) and was considering no finish, but having some concerns about moisture being absorbed into the interior side of the collar if not sealed.
 
I am going to paint all of the apron except for the bottom. I will use sealer as a "glue" for the bottom.
