About to begin my first batches of gallon fruit wines and from everything I’ve read I should be squeezing lightly the bag of must.
Is it good enough to just wash my hands before or should I “sanitize” as well?

I wash my hands and wrists very well, scrub my nails, use a clean towel, and dip my hands in the sanitizer solution right before squeezing the bag. I've done that many times and it's never caused a problem so far as I can tell!

Also I wring as much juice as possible out of the bag, even if it makes things murky. I want as much fruit as possible to stay in the wine, and it clears up later.

I wear nitrile gloves and give them a quick spritz with star san.
