And it is so damn good! I brewed this on March of 2016. I found a few bottles in a case I forgot I had stored away. It tastes way better than what it was a year ago. It is a dunkelweizen and it's probably oxyidized but it tastes so malty and rich!

Has anyone experienced this? I thought wheat beers taste bad if left too long to age? Could the oxidation be giving it this sweet, rich, malty flavor? I wish I've aged the entire batch.

Do you think this maltier, richer flavor is coming from the oxidation? This thing almost tastes like a barleywine.
 
About 4 years ago I made a Belgian Strong Dark (Quad) and gave a bunch of bottles away to people. One guy wasn't a fan of dark beers at all and left the bottle sitting in the back of his fridge. My brother saw it recently and brought it back to me all these years later. It was phenomenal. I thought it was pretty good when I brewed it (I looked back in my notes) but now it was mind-blowing. I actually called a neighbor over to taste it with me and he was equally impressed by it. I always knew aging was good for some styles, but this was a real eye-opener. I typically brew a Quad every year in the fall for the holidays, but I think I am going to start brewing them a year ahead of time. I'll make a Quad now and age it until the holidays, at which time I'll brew the batch for the following year.
 
I recently finished the last few bottles of a ipa I made with some crooked stave dreg that I brewed 3-4 years ago. They were in a box I thought was all empty's. I found them after i moved. Man I wish I had more of those kicking around.:tank:
