Used an Extract kit to make an English Brown Ale and after 2.5 week in the fermenter and 1 week in the bottle I figured I would try one to see how its coming along. I put 1 bottle in the refrigerator today around noon and just opened it even though I know you are supposed to have it in there for 2 days. I am very impressed in how it tastes so good after only 1 week in the bottle.

There is not much carbonation but I expected that due to only being in the bottle for a week and not much time in the refrigerator. If it tastes this good now, I can only imagine how it will taste in another week or 2 weeks.

I am now hooked!
 
a lot of people will tell you to save a few bottles for about a month or two after and it will taste even better

Sound advise, but not always easy to follow... I'm having to hold myself back from finishing off the last few bottles from my first two batches. For my first brew, I have one 1L bottle that I want to keep for several months, if not longer, to see what it's like after that much time. I have three 500ml bottles that I plan on opening a couple of months apart. For the second brew (an American amber ale), I have just two 500ml bottles in reserve... I'm thinking I'll chill one down for this weekend, then go a few weeks/month before the next one..

Once you get your pipeline going, it will be easier to hold bottles in reserve. That's one of the reasons that I'm thinking of using 3 gallon corny kegs instead of 5 gallon corny's in the keezer I'll be building. That way, I can bottle what won't fit into the keg, and have it set aside for enjoying later. Almost like a private stock... :D Of course, I might need to set up another keezer/beer locker, for that. :D

Remember, the better they taste the quicker you drink them. Might want to hide a few from yourself so you have some left in a month or two :mug:
 
Jumping on here I also just took my first draw from a recently kegged Irish Stout - it's very green (as I've learned from this forum to expect) but can't wait until Super Bowl when it'll be ready for primetime!
 
I bottle a few "test" bottles each time I brew (use some stewart root beet bottles for this) I try one after each week until I know it carbed up.

Congrats on the first brew.
