I just could not wait to taste my first AG a Honey Ale. It's been bottled for 10 days. Good carbonation so far good taste. I did not even let get chilled, which I should have. I will try another one next week and chill this one. I just can't wait till it's done.

It's called "research".
The hardest beer to wait for was my first batch. The second hardest was my first
AG batch.

I completely agree. It's a lot of fun to taste your beer along the way and see how it develops. I open the first one after 1 week, note how it tastes, try another in 3-5 days, record how it tastes, etc. I also set aside 2 of each batch to age for several months...otherwise I'd never have any get that far out to see how they develop. I've got an oberon that I bottled sunday night, and I'm not sure I'll even make it a whole week before one's opened!
