Jun: I brewed my tea & added 1 cup of honey per gallon... please advise

Hi,

Im making Jun in a 3 gallon jar w a spigot. I brewed my tea and added 1 cup of honey per gallon. However the honey keeps settling down at the bottom. Should I just stir longer or do I let the honey sediment settle?

Also I have 2 jun scoby about 4 inches wide but Im brewing a 3 gallon batch. So do I need to brew longer than 3-4 days becaus my jun is a lot smaller than the brew?
