Having some issues with the jockey box I put together. As you can see, I've opted to connect everything with tubing and hoseclamps, however, I'm finding that after a few days the tubing inevitably slips off the coil. The barb connction is solid, fortunately. I've cranked the hoseclamps down pretty hard, but that doesn't seem to fix the problem. Aside from purchasing a cooler that is wide enough to connect the coil directly to the shanks, I'm wondering if there is another option I could pursue. The coil is 5/16 OD and the tubing is 3/16 ID, so it's a pretty snug fit. Maybe it would be less likely to slip of if I had 1/4 ID tubing. Any suggestions would be greatly appreciated!

What is that existing fitting supposed to connect to?
I'd have said get a threaded barb fitting like this

but I doubt that compression insert would let that work.

You could remove the existing fittings and get a stainless steel compression fitting to some known female thread then use the barbed fitting above...

Now that's a solution! Thanks for the idea. The existing fittings are supposed to connect the coil directly to the shank.

In that case you could connect it to a very short shank, and put a barbed shank adapter (just like the one on the shank in your photo) on the other end for attaching your tubing.
