hey beace, there is a huge discussion going on in a Pittsburgh Facebook group about aging beer, and if your stouts hold up, and if you even recommend doing it, etc.
a direct quote off of the thread is:
" Are the dark app variants recent? They're notorious for having 0 shelf life so if they're from last year or something they're probably not any good"
I don't want to get into it with them, to each their own, I have some I've aged and they are fine.
Can you answer if the brewery provided the aged bottles that Vintage Estates will be selling this weekend?
This post might help from last AugustJust opened a bottle from my warm stock, there is a definite oxidative note to it. Which is to be expected for a barrel aged beer that was in a barrel for 10-14 months then bottle almost a year ago. Storage conditions can cause this to be more expressive as well. All flavors are there just muted by oxidation nothing tart or sour. Unless you are confusing oxidation, tannin, and or bourbon as a "tart" character. I believe it is more of a sharp note. It's not the same beer as it was fresh, but that is to be expected right? The beer is practically 2 years old at this point, its going to change.
In respects to BBVCDA, we retested 6 bottles from our back stock. 5 bottles came back clean, 1 bottle had just a single colony growing which is below the concentration to cause alarm. I will be tasting some bottles later today. Most likely it is once again a combination of tannin, oxidation, bourbon character, and the coffee adding acidic notes. Not to say that there are not some isolated bad bottles out there. All processes are very hands on, including the bottling process. Human error is real and as much as we work to reduce it, it still occurs. If you all have any concerns feel free to email me at [email protected] or [email protected]
Looking over BA and Untappd reviews, there are plenty of excellent reviews of both beers happening on a weekly basis. Very few "infected" comments. I stress to many customers, I have aged the beer already. We have released it because we believe it is a its peak of flavor, aroma, and overall character. Feel free to age some if you like... probably won't get any better. So when it happens, words like infected, sour, and off get used. Phrases like drain pour, going bad, or something wrong get thrown around a lot to. Its beer, its going to change. Barrel aged beer is heavily oxidized before it gets bottled, stability, alcohol, adjuncts, and storage conditions at distributor - retailer - consumer - trader - drinker, can all effect the beer greatly. Keep all this in mind before you load up your cellar.

All of Vintage Estates bottles were hand picked and put on a pallet by myself personally. Notice that the list does not include 2016 BBDA and 2016 BBVCDA or 2015 BB Black Maple. These batches did not fair well. The others have been aged in my vintage back stock, any vintage that I was not familiar with was opened and tasted to ensure that it was still drinking well.
As to the shelf life debate, I think they drink best fresh. Many of the Jackie O's barrel aged beers/stouts can be aged, but I personally believe that they rarely improve. I am not saying that they become undrinkable, but there is rarely an improvement. I have a beer cellar myself and drink beers that have aged well but rarely find beers that are better than when they were released. I am no stranger to having infected bottles, I apologize for the misses that have presented them selves over the 8 years that we have been bottling, especially the brewpub bomber years. Now that we have been running a lab out of our brewery for the last 18 months we have made great strides in barrel filling and emptying practices, bottling procedures, adjust preparations, and lab testing. If anyone has any questions or concerns, feel free to contact me via [email protected] This negative response to our barrel program is nothing new or something that I am overly sensitive about. Lots of it is centered around a few batches that had issues, what is commonly overlooked is the dozens of other barrel aged bottles that have been released over the past 2 years that were free of infection and are probably drinking great to pretty good for their age.

This same exact thing can be said about 99.9999% of every beer made.

Casa fosho. Lunch/early dinner gotta plug Miller's chicken. Legit best fried chicken i've ever had. Late night drunk eats i go with Souvlaki, O'Bettys, or Goodfellas. Jackie O's curds (if they still have em) are also a must.

I've got no problem waiting, if you're planning on going back down. My priority is barleywine but I'd love to try Champion Ground again.I'll be down the weekend of the 8th and should probably be able to help you out.

Dynamo may be the next 500ml release, bottle conditioning is taking longer than expected. The Side Project collab should read Crooked Stave, that will be out in October. The Tired hands collab will hit next year.
