I mashed out too many gallons of wort today for a Belgian Wit, and while boiling it down, I decided to scoop off the scum that forms on top. Once I had, I noticed that the wort is filled with little shreds of white stuff, which i can scoop out with a fine-mesh strainer and just looks like scum. I have a few pictures here:

Sorry for being totally dumb, but is this stuff also hot break? I've never seen it because I always hop the wort at boil so I only ever notice hop bits flying about in the boil.

Yup, looks like egg drop soup to me.

Not a dumb question...how the hell are you supposed to know what it is if you have never seen it?
 
sort of off topic...

I like to wait to add hops until the foam has subsided. I hate boil overs, but I hate them even more when I lose half my bittering hops when it boils over!
