So I have a chest freezer that gets minimal use. I want to turn it into a ferm chamber. My plan is to get a temp controller and tank it off to make it a freezer when I don't have beer to ferment. Is this possible or will I mess up my deep freeze

Running your freezer through a temp controller and running it in the 60s won't mess it up at all. Many, including me, have done exactly that.

You'll always have beer to ferment, though.
