Hi there,

New member here and new to brewing kombucha. I had a dehydrated scoby and the first stage of the process was activating the scoby which takes 30 days. I have to go away for a while (possibly 5-6 weeks) and am wondering if it is possible to halt this stage mid-way - I will be 15 days in. If not does anyone have any suggestions on what I can do as I won’t be able to tend to my kombucha for quite a while.
Thank you.

Although I've never dealt with a dried scoby, never knew they even existed, but I would keep it rehydrating, and refrigerated, in a closed container until you return. She'll be ready to go by then.

I've kept a (live) scoby in the fridge like that for 3-6 months in a plastic baggy with some tea. Sprung right back into action when added to fresh tea.
