This went from box on porch to freezer to glass in about 25 minutes after I got home from work.

Another clean tasting saison with no frills/Fantome dazzel. It tastes like a staple, belgian golden ale or saison. Upfront flavors are yeast derived - clove and pear with a little black pepper/allspice. Slightly bitter with a faint touch of wheat and coriander. Im happy that it doesnt have any "green" vegetal matter taste but at the same time its very plain and under-developed by tome standards.

A little gushy. Roasted malts/coffee bitterness, but it's not over the top. Much more of a malt driven vs yeast driven flavor. If you gave this to me blind I'd never guess that it was a Fantome.

Very enjoyable, but definitely "tame" by Tome standards.

this has a weird iron-like taste I can't place right out of the gate. I haven't had this one in a while, and it's definitely getting better as it warms. carbonation is ridiculous - the bottle didn't gush, but the head was crazy and took forever to subside. once it did, it completely opened up and became something very different. it has that cidery smell that many Fantôme beers have (at least to me...) and some VERY light tartness and musky, Brett-heavy flavor. Some really strange and unidentifiable stuff on the back end too, but I'm also a La Dalmatienne and some Schramm's palate cleanser deep so take this with the most enormous grain of salt you can muster.

Not sure I'll repeat this unless I can drink it first.

I get what you mean when you say Cider. I think their primary yeast gives off a lot of red apple/apple skin. I've had Wildly varying experiences with the newest La Dalmatienne(go figure huh). Some were really heavily herbal and had one that was like a mix of herbal with the newest saison like you mentioned. I need to get more of both of these bottles. For science.

My first Dalmatienne experience was horrendous. Way too herbal, almost like someone dumped shots of gin in it. I had to (almost literally) choke it down. But everyone kept talking about the same damn batch of Dalmatienne and how good it was, so I opened another one a month or so ago. And it was fantastic. Perfect balance of herbal goodness and Fantome funk.

Liked post for popping bottles and not caring much for them only to revist later and love em. Id like to think that its only a matter of letting the yeast do its thing and extended conditioning putting the tomes in the sweet spot but dat variation tho too... That batch of Dalmatienne has never come around for me, not a fan no matter how many times I revisited it.

Considered unliking your post for making moves towards opening a tome and then not.
 
Speaking of gushing, herbal Fantome, does anyone recall the Printemps from 13 or 14? Tasted like it was dryhopped with Italian seasoning at 3#/bbl and the cork flew out when you popped the cap? I still have one and am frightened of it.
Please don't remind me of Oreganotome. It's best we forget.

yeah the 14 had some serious carb, for me it tasted like straight up spearmint....felt like i was chewing gum while drinking this :p

I remember it tasting like rosemary, so maybe spearmint means it's mellowing? Sounds like it's on track to check in on around 2024 or so.
 
I would pay good money to see your reaction to fleur de bommal if you think that era printemps is an herbal assault.

We gotta give Dany some credit, when he adds an adjunct, he goes huge with it. I recall a couple batches of strange ghost were so intense with spearmint that I swear he collaborated with Colgate.

Sounds to me like he rebrewed both strange ghost and fleur de bommal and said F it and smacked ye old printemps labels on.

I've got 11 bottles out of a dozen left.

Ok now I got a chance to taste this bear and holy **** what's going on! I had to have a double take at the bottle to make sure this wasn't the boon black label I picked up earlier. instinct2 this is the 2nd bottle of chocolate you sent me a while ago as you said they've been on the shelves for a long time.... Please buy me that shelf!

This thing has taken a lambic characters while still maintaining that chile after taste, no chocolate though, but an amazing tome. Thanks to everyone involved in making me opening this on a glorious night!

Batch 2. Tastes like regular fantome that is very under attenuated with some sort of rasberry tartness going on. It's good but I'm hoping some of the sweetness I was picking up in it goes away. Could def use a few months of bottle conditioning.



Best before 2019 Pissenlit. Also way too sweet/young for my tastes. The cork barely made a noise when it came out like a porn star's fart after a 50 person anal gangbang. Just a whisper. I was surprised there was any carbonation to be honest. You get the full Dandelion experience here. Apple skin/cidery yeast character. Some Maillard reaction caramel from the malt. This will be right in line once it gets a bit drier.
