Is Fantome "back"?

Yep. Best one that I've had. Super delicate, I've always wondered what one of these would taste like with a few years on it.

When I've had this with a little age I've found it basically just a diminished version of itself/more generic Fantome. Maybe gains a little funk (not all that much) but loses its unique character. I haven't had it more than a couple years old but it seems like one of the handful of tomes that's just better fresh...interested in any experiences to the contrary though. I had the new batch a couple days ago and agree it's very good/best batch I've had.

Also had a Tonka the other day, it's yummy and probably a bit better than it was fresh, though also maybe a bit less distinctive in its spice than it was. As much bitterness as funk. Was worth revisiting though I wasn't inspired to buy more to cellar or anything.

Excited to drink a bottle each of b1 and b2 De Tous in the next few weeks...


Question: is there a pretty consistent time of year when Pissenlit is released? Is a new batch about due? I know Fantome isn't in any kind of predictable release schedule but seems like this has been one of the bottles pretty consistently done once per year.

I always expect that it's a spring release given that is when those damn flowers spring up all over my yard.
 
Had a 2011 (I believe) St. Roch this weekend, definitely past it's prime. Picked up some bottles of this at the brewery in 2011 and it was one of my favorite Fantomes I've had, lots of lambic like brettanomyces character. This bottle had no cork and was definitely showing a lot of oxidation, damp earth, and aged noble hops. Still enjoyable, but I miss that newer Roch.
 
So, the girlfriend blueballed me and brought back zero of the tomes she saw. Huge disappointment. But to be fair, she was there to visit people and not mule ghosts. I've got a #gopickitupformebro request in with a friend so not all hope is lost yet.

Drain poured my first Fantome last night. Year plus old ete that had become flat balsamic vinegar. Alas ¯\_(ツ)_/¯

This makes me nervous for my bottle. I think I bought it about a year ago.

Wife came home last night from a work trip with a suitcase of To Ol, Fantome and Propolis. Then I gave her the ghost if you know what I mean.

Just moved into my new place so I gotta let the tomes of old out. This is the oldest I've had yet, by about a decade.

Oxidation has set in but in a very good way. It has transformed into a tart candied apple flavor. I've only had lambics this old and like them this definitely shows me of how a beer can age gracefully even with oxidation. Carbonation is still there and cork came out with ease.

This is so freaking good and drinkable, good thing this was the last bottle on etre or I would be buying the rest tonight!
