The Best Fantome Saison I've had in years!!! I bought it at my go to spot in SF about 3 months ago(it only had a cap... no cork inside)... Nicely carbonated!!! The taste is like the Fantome I had years ago!

Ohhh and the Boo Chips go well with the beer :D
Boo chips have changed this year.


I don't approve.

First crack at dis guy. Was hoping for dat chronic white label, but this black label is still damn good.

My first two bottles of Fantome arrived this week and one is a white label Dalmatiene. Am I in for a treat?

The other bottle is a les diapes.

Do I want to hold onto these or drink them immediately and wish I had more?

The De Tous Les D'iapes is perfect right now. It will change, and may be as good, but you should try it now.

Best by was actually marked on one bottle, so I think these were from 2011. Dark was good. Chocolate and red fruit with pleasant acidity and a little Tome magic. Light was very smokey on the nose, but as it breathed the phenolics dissipated somewhat and became more pleasant. Very lemony, very interesting beer.
 
I can only dome 1 tome before going out hunting this evening. Gonna leave it up to this thread to help me decide if im taking down a sante 19 or dark version of coffee ruby. (Leaning towards dark coffee since i havent heard any opinions about it.)

Decision needs to be made in the next 30 mins. And go...

my beer fridge is set to be colder than it should be for this very reason. had i opened this any warmer it would have expolded everywhere. this one is excessively carbonated and my first impressions are nothing but carbonic character in smell and taste. ill let the bottle air out for the next hour or so and comment on its evolution as i drink through it

Would probably benefit from decanting as well, might be a good experiment to compare decanted v non.
 
i have not had the US distro coffee ruby, only batch 1 euro that tasted like a clean saison with no coffee
Any idea if the bottles of coffee ruby on Etre a few months back were batch 1 or batch 2? I haven't opened the bottle I ordered yet.

i think you can tell based off the best by indicator on the label. off hand i dont know but if you tell me which you got i can compare it to mine and let you know

edit: or you can look back a couple pages in this thread where i beliebe i posted both best by dates

That's too bad. I pulled mine straight from the cellar/cave and the carbonation was not excessive at all. Not sure of a batch #, Brewery purchased. Quite enjoyed it, malt, coffee, chili? Drinking the whole bottle was not a problem. Taking one home this week and will see what others think.

This got a really nice lime zestiness to it and a very defined clean saison yeastiness. Kinda makes me think of what it would be like if a bottle of Tous Les Djapes mated with an imperial version of saison dupont - this would be its baby.

I like the fresh zestiness but dislike the standard saison yeast notes of clove/banana mixed with it. In its current situation it shows no house tome character. I will revisit this in a year or more.
 
Another bottle of classic saison taken down last night. Us import from latest batch.

Perfect carb. More cloudy than usual. nose of tropical fruit (dried mango, yuzu, pineapple, honeydew melon) and white pepper. Amazing. Taste was a bit of a letdown compared to the smell. More yeast esters than expected, and it was less 'juicy' than previous bottles of the same batch. Just a hint of the tome funk. Better as it warmed.

Overall pretty good but nothing world shattering. Can't wait to open another to see how it compares with the last two.

Weird. I opened a bottle last night (regular saison, US label) and the taste was on ******* point. Juicy fruit gum and fantome yeastyness. Absolutely delicious. Best fantome I have had in quite awhile.

yep, the other bottles i had were more like your description. this wasn't bad by any measure, just not the finesse giant of juiciness i love.
 
I've read here that De Tous Les D'Iâpes is hitting its prime right now so I decided one up.

On the one hand this has a lovely citrusy flavor, most tart and fruity Fantôme I've ever had. But then the aftertaste comes and it's just a little off. I'm not really sure how to describe it, kind of mouldy, reminds me of mushrooms but not really? Really torn on this bottle, it's great and horrible at the same time.

Bottle was still clearly sick and super ropey. No carb but the taste was still awesome. This could be a special bottle in a couple years once it cleans up.

Now I feel a bit bad about passing up those Dalmatiennes here. Typical libbey .

Will console myself with mouldy label old bottles of Blanche. Which is and was amazing.
