Is Fantome "back"?

I just cant wrap my head around this...
There are so many advertised spice additions and I have no baseline of knowing what any of them are contributing to the beer if anything.

It smells like a very clean and typical saison with defined yeastiness and fruity pear/apple skin character and a hint of citrus. The taste is super dry and pithy like some zest and pulp of some bitter fruit is added. The finish is a little grassy and has slight yeasty phenolic character leaning towards black peppercorns.

Its not tart.
Its not funky.
Its not Fantome as I know and love it...but I kinda like it.

This is very much like a belgian ipa of sorts but not overly bitter.
I just received my care package from Belgium the other day... I can't wait to try the Tonka & DMD?

this is also an etre freshy with BB2018. severely lacking in carb but not ete lacking in carb as a few months ago. its like...clove banana strawberry juice. this is a very fresh bottle and by all means with some age this has the 'potential' to be one of those life alteringly amazing bottlings.

No photo, but I opened a 2004 Pissenlit a few weeks ago. I'd swear up and down Dany used to blend lambic into this beer.

Bottle of 2003 we had last year at Fantomefest had some bright, citric acidity along with a fair helping of funk. Could definitely see it being mixed with lambic.

So how much time would you say "some age" is? I'll probably try to age some of these and was wondering what your experiences have been.

It seems like it took several months for the last bottling(s) of Ete to come around with carbonation but I dont think that the brett character has started to show in it yet.

I guess it all depends what you are looking to get out of it? There is a very unique and distinguishable house character that older Fantomes display (when I say older im talking 4-20 years old.) Its much more vibrant in some examples and honestly I dont know how long it takes for that to come out (if at all!) Ive had some really old tomes that were clean without house character and some so funk'd up that you would swear they were blended with lambic like some have mentioned.

The beauty of sites like etre and biab is that we can now buy Fantome fresher than ever before! But there is a downside to that as I was previously accustomed to plucking a bottle off a shelf that was already aged potentially months/years and already well developed.

I'm not sure what I want to get out of it. I've only had fresh Fantomes so far as I'm pretty new to these kinds of beers and also because Fantome bottles don't seem to last too long in my house. I've gotten hints of that house character you're talking about but I've never fully experienced it. If you're saying they can be good up to 20+ years then I've got quite a long journey ahead of me.
 
Latest batch of Pissenlit is seriously good. Maybe a little sweet right now but I'm glad I bought 3 bottles because I definitely want to see how this tastes with a little age on it.

Agreed. Got to have a few drafts of Pissenlit and Saison at Fantome a week and half back. That batch of Pissenlit really stood out. Saison was quite good as well (no smoke, rubber, etc) but maybe needed a little time. Drinking a bottle of Ete as I type, and it has not carbed up at all, sadly. I'll hold my other. Great thread...

It's pretty good! :) It has to have the same grain as the regular saison... after taste is the different herbs and spices from Brazil. Hops say Nugget. I would buy it again! Cheers Dany!!!
