i typically enjoy most Fantome and think they get even better with age. however, that was not the case here. it smelled sweet almost like cotton candy and the taste was very plain/clean. it displayed no typical Fantome yeast/brett character. just a weird bitterness with no discernible flavor

I brought a bottle of that to my first big bottleshare (Eclipse in 2011) and I think people were more excited to try it than if it were Blauw. IT'S SO GREEN!!!

the color was definitely the only thing the other people commented on "why arent we drinking this next month for st patricks day?"

Shame to hear. That beer was amazing when fresh.

thats how all magic ghost pours if you cold crash and pour carefully. i poured all the glasses in 1 shot without tipping it back and forth. i told the guys at the tasting that if they swirled the dregs and poured it, it would be more aqua colored... i should have placed a bet on it because the looks on their faces was priceless when i swirled and poured the last 5oz out the bottle
 
Just cracked a bottle of the most recent saison and I'm pretty sure it was pedio sick. Similar to jello that's been left out of the fridge too long. Having never experienced a sick bottle before it was equally disturbing and intriguing. Anyone know how long it takes Brett to clear pedio sickness up?

There are enough variables that I don't think anyone can give a definitive answer, but sometime between next week and never.

Keep the bottle in a warm spot in your house and give it at least 6 months. Longer isn't going to hurt though.

Yeah, I'm thinking of sitting on the rest of my bottles for some time. Anyone else have recent tome bottles with pedio sickness?

I have not. But in all honesty...while it freaks some people out, it totally gets me excited. Seeing wild occurrences in tomes and knowing there are non-sac microbes in the juice makes me giddy (especially after drinking a couple examples of tomes that displayed zero of the classic house character.)

Yeah, I was pretty excited to see it and taste it. The mouthfeel was a bit disconcerting but definitely something I was interested in experiencing. It was definitely off flavor-wise from other tomes I've had. Not bad per se, but just off.
 
What is the going rate for ete and Pissenlit retail? Turding it up at a shop around me for 18 each.

Same here. Standard saison is long gone. Hoping to see more soon.

There's still a case of Ete and Saison turding it up at the liquor near work for $16, but that's probably because the place is notorious for selling brewery-only bottles and Cantillon for unbelievable prices.

Same here in SF. So much Ete left here. All for ~$17.

I would be buying up that Ete. I know it has been hit or miss but the bottle I opened was perfect carb and tasted great. I hope the other one I have is the same.

Both bottles that I bought were flat. The first bottle I mixed the last 8-10 ounces with some homebrewed saison. The second bottle I just took down like it was alcohol spiked Capri Sun.

I've opened up three bottles thus far, and all of them were fantastic, with no carb issues whatsoever. I guess I'm just lucky like that.
 
If anyone wants to buy any of those "shelf turd" Ete bottles and trade them for some shelf turds I can get 'round my parts, let me know.

Mine had good carb, but it didn't feel done fermenting. Definitely one that could be spectacular in a few years.
