Dude it is gorgeous I couldn't help myself from buying most of the case off. When you break that cold, dome one trust me. Had one more last night and I am convinced this guy is a warlock.

I get the pineapple. Light spiciness and sweetness. I really dig it. Paired well with savory turkey pot pie. Might got get a few more bottles to see how it ages.

Been out at least for a year. It sits as it costs $28ish a bottle.
 
I cracked one about a month ago, and I wish I sat on it for another 6 months or so. It was a little phenolic, and hadn't started developing much funk. Definitely needed some more time.
Opened one the other day, what you said pretty much. Kind of Herbal and peppery. Should be really good with 6+ months on it.
 
Any recent reports of Sante 19? Trying to decide if I should open my only bottle soon, or sit on it for a few more months.

I wish I had more Fantome :(

What is it you are looking to get out of it? Im a firm believer that if you never had a certain beer before, whats the point in aging it if you later wont have a point of reference for comparison? (Exception being flat bottles or sick ones that need time to clean up or carb which isnt the case with Sante 19.)

I guess what im saying is, tomes are all unique experiences so get into it! Its a fresh enough release that if you love it, getting more wont be difficult.

In looking at my review from 2 months ago: i felt it had a nice zesty citrus character and clean defined typical saison yeastiness. It was lacking the tome funk but tome funk sometimes takes years to become noticeable and by then that citrus zip it displays now will likely fade.
