Drink it!!!So I had avoided Fantome in the past; wasn't into funky beers like I am now, and had heard about ongoing QC issues. But, I've been reading this thread with interest. And... some 'Tomes just hit the shelves in my area. So I finally, apparently long overdue, grabbed a bottle. Pissenlit.
So here's my question... label says best by end 2018. Open soon? Cellar?
Do I almost need to grab a second bottle so I can do both?

Black metal and saisons. Two of my favorite things.I know, the "album in the background" is kinda dopey, but it just seemed so appropriate. Wolves in the Throne Room, Two Hunters.

My expectations were for something really weird, and over the top; this isn't what I expected. It's just damn good. A very cool sorta-saison with a whole lot of depth. Stone fruits, herbal bits that stay balanced and clean, and a very cool, unique dry funky yeast thing going on. I usually get turned off by herbal flavors, but this really keeps things perfectly in check.
And the more it warms... and on to side 3 of the album, the best track... Damn. The floral, herbal bits really come out, but still stay checked by that dry, musty yeast backbone.

Hindsight... The part that really blew me away was not only that there was so much going on in such a drinkable beer... but that I couldn't even describe half of it.
Wow.
Must buy more bottles.
Providing another data point on the Sur lie bottling with label that shows best before end 2018 and lot number ab N 14.
First off, this sur lie bottling has the hazy orange tint to it when you hold the unopened bottle to the light. When poured, its more orange than most batches of classic saison. I opened a bottle a couple months back and it was still but the flavor profile had me fully torqued. This batch is reminescent of the old batches circa 05-08 that were honest to God, the best beers ive ever drank in my life.
This is now carbonated and smells/tastes like strawberry/pineapple/orange/mango with Fantôme funk already showing. This beer is a ******* show stopper.

all bottles i purchased came from etre within the past couple months. unfortunately they were sold out for a couple weeks now and even if they restock them now it will be a different newer batch

Was there for Open Doors and Sante #19 release this year. The classic saison they had on draft was stupid good! This years Sante is also a thing of beauty. Fresh, bright citrus and just the right amount of herbal spice. Cellar temp or even just a bit warmer and from the bottle was how we drank the Sante. Coffee Ruby from draft was unique and enjoyable as well. I too have had many hit and miss bottles in the past but recently (all Euro purchased) they have been great.
Just drink it and say you forgot you split it.Anyone else tried Sante 19 yet? After how disappointing the last few were I only got one to try, and have to wait to share it with someone before I can open it since we split the cost. If this year's is a good one I might go ahead and grab a couple more...
So as far as I gather Fantome really is "back"?
I'm going to one of the biggest beer stores in Belgium soon, and I was making a shopping list, but I'm pretty safe as far as Fantome is considered? Might as well just get everything they have in stock then

Thanks to tosh for pointing me towards the bottleshop that just happened to have these in stock.
All the flavors are very subtle, but combined together make a very solid and quite stellar beer.
Not much of a fantome fan boy and admittedly pretty new to drinking them, but if danyP keeps putting out beers like this and Ruby, I'm going to turn into the biggest fantome homie.
