I'm doing my first all grain since moving. My water tastes great and is clear, but it's apparently high in iron. As all my appliances are rust stained.

Should I try to filter or start with distilled and try to build what I need?
 
If iron is your major problem and there isn't much calcium and magnesium in the water, then ion-exchange is effective for treatment and it should not add too much sodium to the water. Unfortunately, most waters have a significant calcium and magnesium content to go along with the iron and you will end up adding more than desirable concentration of sodium to the treated water. Greensand filters are another option, as is a aeration and filtration system.

RO is probably an easier alternative in many cases.
