So I have an Irish red recipe that I modified some. Added some honey and sugar to boost abv. I tried some last night, now this is only it's second day, and I have to say at this point it is one of the most delightful beers I've ever had. I could sit there and drink all day long. Now granted it probably was at .5% alcohol at this point and it's been going strong for a day now. The question is. What sort of changes should I anticipate in flavor when it's finished? On a side note. Brewers yeast on the stomach has funny effect :)
 
Wow!!! if it's been fermenting for only one day I would suggest the flavor will change tremendously, hopefully it will be close to the irish red style when finished.

I would suggest you step away now and leave it alone for at least 2 weeks then check the gravity to see if it's near completion. It should be closer to an irish red at that point although still green, etc.
 
I figure it will change some I just kind of wish I wouldn't much. I'm gonna save the recipe and compare when finished to determine any changes to make. I'm just real pleased with it's texture and flavor currently.
 
First of all: do NOT drink beer after one day of fermentation. Let it be for at least one week before you taste it. It's not gonna kill you, but it WILL keep you regular, that's for sure.
The beer will change a lot after fermentation, I guess it's sweeter now, and later a lot of sugars will convert into alcohol. So if you like the way the beer tastes before the fermentation is done, consider next time making beer with less alcohol and more unfermentable sugars, like adding a little more crystal/caramel malt.
 
Irish red is one of my favs. Many people cal them boring, but they are medium bodied refreshing brew with a nice smooth flavor. Too much sugar may ruin the brew, there is a reason they usually come in at a 4.6 to 5.1 ABV. You do noit want to get a hot alcohol taste, that would be bad.

Let it ferment totally, and allow for conditioning, I went 3 weeks in the fermenter and wish I left it another week. I am putting 6 a side for a long bottle conditioning to see the difference. Be patient and enjoy it is a good brew.

It was my second brew and am going to ave to brew more because I can't get enough of it. It is perfect for a cool off brew or a dinner brew.
 
Yeah scooby I've...uh...noticed the regularity :) and yes a part of what I enjoyed was the sweet but I can handle it being less sweet I think it was the overall taste of the wort in general. A good mellow feel a slight bitter at the end. I plan on leaving it for the rest of the ferment and I think I'll follow the crystal/ Carmel malt idea on my next attempt. The fermentable sugar/abv/general feel balance im gonna have to test. My problem was that once i calculated out my initial abv it was running about 3.0 and that seems anemic to me This is my first red and was pleased with the smells while brewing as well. Now to wait and bottle..... Maybe next week a hefe
