I have been trying to recreate a no longer produced beer that I haven't tasted in 20 years. Chicago Brewing's Legacy Red Ale. I have done research and found someone's idea of the recipe. The biggest thing I remember about the flavor is hops!!! The recipe says 60 min. Chinook 30 min. Willamette and 15 min cascade. I am using Maris otter and amber with a little crystal 60. The flavor is really close but not quite what I am looking for. It is kind of dank and earthy. I am looking for more floral but not crazy. My main question is would 1056 bring more of this out than the 1084 Irish ale that I am using or do I need to switch my hops? All opinions welcome.
I almost forgot the last time I added cascade at 5 minutes instead of 15 and not much difference.

10lb. Maris Otter
3lb. Amber
.25 lb crystal 80

1 0z Chinook 60 min
1 oz Willamette 30 min
1 oz cascade 10 min

Irish ale yeast
