Rogue's Dead guy is made with Perle and Saaz. If you haven't tried it give it a shot. I know it's not an IPA but at 40IBU it gives you a little taste of Perle used it bigger amounts.
Sierra Nevada uses them at 30, so rather than strictly a bittering or strictly aroma, this would be more of a "flavoring" hop. I am actually planning on brewing a pale ale next week with perle @30. I have not yet brewed a batch with perle but ive heard they are tasty, slightly spicy and work well as a dual purpose. I really enjoy siera nev, so if u like that beer as well i would say its definitely worth a try!
I love perle hops. They work great as a bittering or aroma addition. They just aren't popular as aroma in American styles because they lack the citrusy character.
I used Perle & Saaz in my Sunset Gold APA the first time I brewed it. Nice smooth spiciness to them. It's good & a nice change in a pale ale. Check out my recipe for the flavor hop times.
