Here's a simple one I brewed as a small batch that was surprisingly good. It comes out with a strong and sweet malt backbone, paired with an equally strong resiny and slightly piney flavor from the hops. Makes for a surprisingly good combo of flavors.

If you need any clarification on anything just let me know. I also made similar IPA's using cascade and simcoe if you're interested.



Chinook IPA

Recipe specifics:

Style: American IPA
Batch size: 5.0 gal
Boil volume: 3.0 gal
Boil Time: 30 minutes
OG: 1.066
FG: 1.016
Bitterness (IBU): 64.0
Color (SRM): 8.7
ABV: 6.5%

Grain/Sugars:

3.00 lb Light DME, 35.3% boil for 30 min
3.00 lb Light DME, 35.3%, boil for 5 min
2.00 lb Crystal 10L, 23.5% (steep for 20 to 30 min before boiling)
0.50 lb Cane Sugar, 5.9%, boil for 5 min

Hops:

1.00 oz Chinook (AA 11.5%, Pellet) 30 min, 27.7 IBU
1.00 oz Chinook (AA 11.5%, Pellet) 20 min, 22.7 IBU
1.00 oz Chinook (AA 11.5%, Pellet) 10 min, 13.6 IBU
1.00 oz Chinook (AA 11.5%, Pellet) dry hop

Yeast/Misc:

California Ale yeast, 1.0 unit(s), Yeast
Irish Moss, 1.0 unit(s), Fining , boil 15 min

I really liked the one all-Chinook IPA I brewed previously. This looks great (quick brew day).

Question about the amount of crystal: had you tried a smaller amount in the past, but didn't achieve the flavor you were going for? Or did you try 2lbs initially and just happened to hit a home run?
 
Proportionality, I used that amount of crystal. This is a scaled up version of a 1 gallon experiment. I went high on the the crystal so if I didn't care for Chinook, I had hoped the crystal would keep it toned down. Just turned out Chinook and crystal work really well together.

You could scale it back a bit I imagine. Maybe even remove 1 pound of crystal, for another pound of DME at the end of the boil.

If you understand your own palate and how the typical IPA is designed, then a simple thought up recipe works better, and costs less, than any kit.

You also have more control over the quality, freshness, and amount of ingredients, e.g. new crop hops, Light DME only, Crystal 20 perhaps, corn sugar, and a specific type of yeast other than what they throw in.


Basic Extract American IPA

1.065-1.067 OG / 1.014-1.016 FG

8 oz. total hops, most ofwhich are used late
65-70 IBUs

6 Gallon Boil / 5 Gallon Batch

7.00 lbs. Briess Golden Light DME or Muntons Extra Light DME (half added at boil start, half added at flameout)
0.50 lb. Crystal 20L, or Crystal 40L (crushed & steeped separately at 155 F for 30 mins, then added to main wort volume)
0.50 lb. Corn Sugar, or Table Sugar (added at flameout)

Boil 60 mins, 0.75 oz. High-alpha % American pellet hops like Columbus, Magnum, Horizon
Boil 15 mins, 0.75 oz. High-alpha % American pellet hops like Columbus, Magnum, Horizon
Boil 5 mins, 1.50 oz. Aromatic American pellet hops like Amarillo, Simcoe, Citra, Nugget, Centennial, Cascade
Post-boil hopstand, 30 mins at 140-170 F, 2.50 oz. Aromatic American pellet hops like Amarillo, Simcoe, Citra, Nugget, Centennial, Cascade
Dryhop 5-7 days, 2.50 oz. Aromatic American pellet hops (included during primary time)

Safale US-05 dry yeast, fermented at 66-68 F

Primary fermentation: 3.5 to 4 weeks, add dryhop during the last week.

Bottle with priming sugar using a priming calculator like this one - http://www.tastybrew.com/calculators/priming.html

Wait for it to carbonate at room temp. Refrigerate. Drink.


^This is very simple and moldable recipe. It won't be too sweet or too bitter. It won't be dark either. Nothing has to be mashed. The malt profile will be subtle, but present. It will not interfere with the hops. You can swap the hops, use different hops, or switch up the hop timing. If you want a drier beer, you can replace a portion of DME for slightly more corn sugar. You can also reduce the Crystal Malt from 6% total fermentables down to 4%.

8 lbs Ultra Light Malt Extract

Steeping Grain @ 170 degrees for 30-40mins
1 lb 2 Row
1 lb Honey Malt
1 lb White Wheat

Hops

.5 oz Galaxy @ 60
1 oz Galaxy @ 20
1 oz Galaxy @ 5
1 oz Galaxy @ 1
2 oz Galaxy @ Dry Hop 2 weeks after fermentation for 7-10 days before bottling/kegging

Yeast
Safale 05

1 lb 2 Row
1 lb Honey Malt
1 lb White Wheat

2 Row and White Wheat are unconverted, starchy grains. They must be mashed at a specific temp for a specific time, not steeped. You'll be left with residual starches, proteins, and haze in your beer if you simply steep them.

It's also kind of silly to use 1 lb. of 2 Row when ultra light malt extract is essentially pure 2 Row.
