Hey all,

Just about to try making our first Extract/Speciality recipe from scratch. I've used the Recipator for all the calculations, but all the information is below. Units are in metric, but for all intents and purposes it's a 5 gallon batch (with about 0.5 gallons allowed for loss to trub).


Style: India Pale Ale
Type: Extract w/grain
Size: 22 liters (~5.8 gallons)
Color: 16 HCU (~10 SRM)
Bitterness: 34 IBU
Yeast: Wyeast 1056 (~75% attenuation with a 1.5L starter)
OG: 1.061
FG: 1.014
Alcohol: 6.0% v/v (4.7% w/w)

Grain:
226g (0.5lb) American crystal 60L
Boil: 60 minutes
Boil Volume: 15 liters (4 gallons)

Extracts:
3kg Light dry malt extract
500g Amber dry malt extract

Hops: (All Pellets)
28g Centennial (10.5% AA, 60 min.)
14g Centennial (10.5% AA, 30 min.)
14g Cascade (6% AA, 15 min.)
14g Willamette (5% AA, 15 min.)
28g Cascade (Dry hopped in a bag in secondary)

Opinions? I know the IBU isn't as high as a lot of IPA's, but we're looking for a beer with a lot of hop Aroma, but not an overwhelming bitterness. We'll be fermenting as low as we can get the temps with a water/ice bottles. Hopefully we can keep it around 60F-66F

The reason we're using 500g of Amber DME, for the record, is that we have about 750g left over from a big porter we've got ticking away in secondary right now that we'd like to use up before too long.

This is what my hop schedule would look like with those hops. All added late will give the most impact on flavor and aroma. This= 37 IBUs which is lower than I would bitter an IPA, but its close to what you had in bitterness.

boil 30 mins 28 Centennial

boil 15 mins 42 Cascade

boil 15 mins 56 Willamette

boil 1 min 28 Cascade
boil 1 min 28 Centennial

dry hop 7 days 21 Centennial

dry hop 7 days 21 Cascade
 
Looks fine - brew it up and it will be great.

For more aroma and a bit of a citrus flavor, add Amarillo at the end of the boil or dry-hop it after a week in the fermenter. Not real bitter - a very distinctive addition. I never make a pale ale without it.
 
Like RCCOLA said, up the late hops if you want more flavor/aroma. If you already bought those amounts of hops, you can add some of the extract late to up your utilization, and be able to move more hops towards the end. For instance, just adding the amber extract late, you can move the 30min add to a 10min add and keep basically the same IBUs.
