My main question is...what would adding another pound or 2 of DME do for me? i know itd probably bump up my ABV but flavor wise im not sure...

I wouldn't bother with the 45 and 30 minute additions. You aren't getting any flavor/aroma from those additions and are getting less IBUs from them as a result of boiling them for less time. I would recalculate the IBUs based on mostly the sixty minute addition. Then add more at the end of the boil. Adding so much in the middle of the boil is a waste of hops IMO.

will take into consideration
what do you think about adding some extra DME?

:tank:cheers to the bay area!:tank:

edit: after some research...i think ill be cutting the 45 minute addition and adding some more to my 15/30 minute adds

How sweet do you want the beer to be? With that much extract and crystal malt I would expect the beer to finish pretty sweet. FWIW I think the Pliny homebrew recipe has something like a half pound of crystal 45 and corn sugar at 1.070. If you want to up increase the abv I'd say just use corn sugar.

I second both comments of moving the 45 and 30 min additions bringing those to the 10 and 5 min mark or so or even 5 and 2 min. Using sugar to help dry it out a little more if you want more alc content. That's a personal taste of mine though.
Adding another lb or 2 of DME isn't going to contribute much to the flavor, just make it a little sweeter, higher alc content and higher FG.
