I brewed about 30 different beers so far, from Porters to Belgian strong ales, Stouts, Saisons, Hefeweizen and, of course, a majority of IPA, Double IPA and APA.

I'm looking for some more off-track stuff, however you call it, "speciality beer", "extreme brewing",...

What would be your suggestions for some next steps with a good balance between fun/complicated/interesting to brew and still reasonably drinkable?

Have you made any lagers? How about Sours?

What volume are your batches?

Are you doing full mashes? Mini-mashes? Extract with steeping grains?

How strong are your strong ales? What is their original gravity?

Are you looking to shake up your process? Use some different ingredients? Make some super-strong beer?

People define "intermediate brewing" and "extreme brewing" differently. Just trying to gauge your definition.
