Insulation for a (Relative) of Fermentation Chiller

I'm figuring out the design of a fermentation chamber, and I'm wondering if the soft, fluffy sort of insulation might be a better fit, given that I don't intend to use it for structural support. (The shell needs to be wood, so that I can stain i and make it look like a presentable piece of furniture.)

Does anyone with actual experience with insulation have advice for me?
 
I wouldn't want fiberglass insulation around my beer. Seems like a bad idea. Why do you want to go that direction with the insulation?
 
I'm just considering the options. It occurred to me that the other designs used rigid insulation by necessity.
