I just pitched an imperial IPA (1.075 SG) with a repitch of yeast bay Vermont ale yeast.
The yeast is tearing through the beer with the same intensity it did with the lower gravity beer I harvested it from. I would expect it will ferment out completely within 7 to 10 days.
My question - once active fermentation is complete and the gravity is stable, how long should I leave this bigger beer on the yeast cake to "clean up" before I dry hop for a few days and keg it?
Normally I go about 3 weeks total time in the primary and keg it with my other beers. Does this higher gravity beer need longer?
