Hey everyone,

I just pitched an imperial IPA (1.075 SG) with a repitch of yeast bay Vermont ale yeast.

The yeast is tearing through the beer with the same intensity it did with the lower gravity beer I harvested it from. I would expect it will ferment out completely within 7 to 10 days.

My question - once active fermentation is complete and the gravity is stable, how long should I leave this bigger beer on the yeast cake to "clean up" before I dry hop for a few days and keg it?

Normally I go about 3 weeks total time in the primary and keg it with my other beers. Does this higher gravity beer need longer?

The "clean up" happens within about 24 hours of the beer reaching FG. You can leave the beer on the trub as long as you'd like- some folks like the flavor and character imparted by a longer contact time with the yeast, while others do not.

I generally go about 3 days or so after FG is reached, or active fermentation ends, and the beer starts to clear.
