I am using the Imperial Global L-13 yeast for the first time in my Pilsner. Imperial says the temperature range for this yeast is between 46-56 degrees F. I am used to stepping my Pilsner Yeasts from about 52 degrees to 64 degrees, usually two degrees at a time every couple days. I am not sure that will work or should be used with this yeast. Asking this group if you all have any recommendations for temperatures to ferment at (Temps, length of time per temp, and temp ranges). I control temps with my glycol chiller, so can make it work.
I have also contacted Imperial for their recommendations. Brewed the beer yesterday, and currently have the wort set at 50 degrees. No active signs of fermenting activity yet.
