Greetings...

I've been pretty active on here for a few days now, and didn't even post an intro... how very rude of me. I'm 28... live in St. Petersburg, FL... a musician and stage combat artist. I do many events from Renaissance to Pirate faires... to whatever else I can get my hands on. I'm a huge fan of ciders... specifically very dry ciders with just a touch of sweetness. Means and wines are pretty awesome as well.

Never been a big beer drinker... I think it's the hops that turn me off. I notice that I drink hoppier beers more slowly. I do love darker stouts when I'm in the mood though, Guinness... Murphy's... etc...

I've always had a light grasp of fermentation and and brew science, as I know some really amazing brewers, and makers of other... unmentionably stronger substances that also require knowledge of fermentation and the like :)cross:)... but I've just recently pulled the trigger and put together a decent gear-set to get started myself.

Gonna make some basic ciders and maybe some meads to start of... but I'm sure I'll end up making some wheat beers and stouts for friends and family in the future... so perhaps that will better my appreciation for beer flavors. Guess we shall see...

I'm going to be updating the blog here very regularly... as a moment to moment journal of my adventures in fermentation/brewing... so feel free to check it out and give me critiques/advice... I'm a big fan of constructive criticism... and with the help of some of the very knowledgeable brewers on this site... I have no doubt that this venture will be more than successful...

If I were you , I would do a batch of this. It only takes a few weeks, I've done about three batches (shows it is drinkable). This way you have something to drink before waiting the 4 months or so to do most of the recipes. SWMBO has me under a small disclosure of this recipe, easy on the drinking....It puts alcohol in your system fast.

Thanks for the suggestion... I'd considered this... But was afraid it might be too bitter... I'll try it anyway... Sounds like fun...
