Im just about to bottle my first brew. I've had it resting in the secondary for a week. It's clear and beautiful looking brew. My question is about the bottling. I'm going to be bottling using priming sugar. My understand is that the priming sugar will kind of kick start the yeast and carbonate the beer in the bottle. My question is, since transferring the beer to the secondary and cold crashing it to clarify, will there even be enough yeast to react with the sugar? I'm a bit unsure about it. Also, after bottling how long do I have to wait to drink a carbonated beerski???

Yes there will be plenty of yeast left to carbonate your beer. The only time you have to worry about reyeasting is if you aged the beer for an extended period of time, like many months or if it's a very high ABV beer. Where the ABV is at or higher than the yeasts tolerance.

Carbing a bottle can take anywhere from 1-3 weeks. I find they are usually carbed up right after 2 weeks. Once carbed, let them cold condition in your fridge for a bit.... or as long as you can stand it. After 2-3 weeks the beer will be good. After 4-5 weeks, it will be very good. And right about the time you pop one of your last few bottles, it will be so good you'll wish you conditioned the whole batch longer.

Congrats!

Seems like I was just on my first bottling...now I'm getting close to my 4th.

How time flies when your having fun!!:mug:

I have bottled on Friday morning, and with great impatients tried a young HB on Sunday evening. To my delight I find it had to some degree carbonated. It is usually delicious, but as stated previously, when you drink the last one a couple months later you will find it has improved significantly. My own practice involves tasting at all phases of aging just to get an idea of how the flavors develope. I can still remember my first extract beer, sitting on my porch on a cold December evening, a whopping 2% ABV, still it was awsome because I had made this beer.
