I'm looking for suggestions, trying to decide what to brew now that will be a good beer for Christmas and New Years. I already have a pumpkin ale thats fermenting, getting ready for Thanksgiving. :mug:
 
Nothing says winter quite like a home-brewed milk stout. I just brewed an imperial pumpkin porter over the weekend in preparation for turkey day.

Is it going to have enough time to finish before T-day? I usually let my big beers go for a few months before serving.

Belgian dark strong aged on sweet/sour cherries. Big beer, ruby red color, my favorite for Christmas time. There are a few recipes on here. If you decide to do it, I'm happy to send you my version if you want.
 
I just racked Midwest's PM Traditional Stout kit onto oak/bourbon in secondary,better known from colonial times through Prohibition as Whiskely. 2oz of oak chips def will not go down the neck of my 6G better bottle in one hop sack. Had to sanitize a second one to get'em all in.
Gunna brew a robust porter with vanilla next weekend/week. that one with the stout will both be for Christmas. Got two IPA's that'll still be good for Thanksgiving. The 1st one won't even start being fridge ready till 11/1. Can't get more traditional than something like these.
Unless you maybe do a porter with vanilla & spices. Or a dark punkin ale.

I'll second the vote for milk stout. I'm brewing myself a milk chocolate stout to have around come Christmas time.
 
There's a Santa Baby spiced holidayale in the spice/herb/vegetable section of the recipe data base that I'm planning on brewing next. A few others have tried it and done some modifications which are listed in the post.
 
I want to thank everyone for all the good suggestions. I'll have to decide on a couple of the brews very soon. I just kegged a pumpkin ale that is really tasty. The spice and pumpkin flavors really come through nicely. It is ready for Thanksgiving! :)
 
Peppermint? I'm not sure, but it sounds interesting though. Usually I don't go for too exotic. Can you give me some tasting notes on that?
 
I just racked my milk stout on to various flavors this weekend. Got some raspberry, dreamsicle, bourbon barrel, and coffee versions going. Hoping to age most of them and give them out as Christmas gifts.
